Ingredients
For 2 servings
Instructions
- 1
In a large pot, add the pasta, crushed tomatoes, onion, garlic and water.
- 2
Add the olive oil, salt, pepper and Espelette pepper.
- 3
Bring to a boil, then lower to medium heat. Cover and cook for 12–14 minutes, stirring regularly.
- 4
Once the pasta is al dente and the sauce has thickened, remove from heat.
- 5
Stir in the chopped basil and the parmesan. Mix well.
- 6
Serve immediately with a drizzle of olive oil and fresh basil.
Tips
- Stir every 3–4 minutes to keep the pasta from sticking.
- If the sauce gets too thick, add a splash of water.
- Wholegrain pasta has a better glycemic index than white pasta.
Variations
- Protein boost: add 150g of chopped chicken or shrimp.
- Veggie boost: stir in some spinach and sliced zucchini.
One-pot pasta is the perfect meal when you're short on time. One pot, 20 minutes, a complete dish. Wholegrain pasta brings fiber and a moderate glycemic index. Great for a balanced dinner.
